Introduction

now i must admit that i am not the biggest fan of veggie patties... and possibly may never be. before going vegan i had tried quite a few, and at the time (over five years ago) there weren't many options like there are today. quite literally most of the options were black bean patties, some sort of weird looking vegetable mix, or not-so-great soy patties. i've even had my hand at making patties over the years of La Comida de Jeremie and only a hanful of them were actually memorable as delicious.

but the other day i was inspired to make some after working on publishing recipes for my part-time gig. so i created a sweet potato-cannellini bean patty! and i can attest to being the best vegetable pattie i have ever tried and/or made! even Errol, my boyfriend, found them quite delicious and he's definitely one to let me know when my recipes aren't great when recipe testing. so **ding ding ding** we have a winner.

now for those of you who may not be vegan or even think of veggie patties you may be thinking, "jeremie i don't want no damn veggie pattie", but i promise you friends this one is a winner. i honestly think sometime you have to try the not-so-popular ingredients, like cannellini beans and sweet potatoes, to get a better end result – especially when black bean burgers have been the main option for way too damn long if you ask me.

alright enough yapping! let's get to making these dang patties.

Steps

  1. prepare sweet potato

  2. combine main ingredients + mash

  3. toss in seasonings

  4. saute to brown

  5. bake to fully cook

  6. serve with your choice of pairings

How to make

to bake:

1. preheat the oven to 375° f or heat up a pot with boiling water; once heated, peel a sweet potato and cut into cubes. bake or boil until the potato is slightly fork tender.
2. in a mixing bowl combine your sweet potato with the washed and drained cannellini beans. using a potato masher or food processor to finely mash the two ingredients together to form a thick mixture – similar to mashed potatoes.
3. add in seasonings and taste to adjust anything before forming patties. using your hands form 6-8 patties; can cook all at once or save some in the freezer for another time.
4. in a lightly oiled pan saute each side of the patties until browned and crispy. patties should be ready to eat, but for an extra crispy and more delicious flavor i airfried mine for about 10 minutes longer.
5. serve immediately with any choice of sides or as a burger.

notes:

i enjoyed eating mine with macaroni salad and a fresh pickle slice with a drizzle of spicy mayo that i made at home. these also make great meatball replacements that you can pair with sauces like a peanut sauce or marinara. so delicious no matter what way you decide to eat it.

  • 1 can cannellini beans

  • 1 small sweet potato

  • 1 cup panko crumbs

  • 1/4 onion, diced

  • Salt

  • pepper

  • Nutritional yeast

  • Chili powder

  • Onion powder

  • Garlic powder

  • 1/2 tbsp pureed garlic
